Autolyse

According to Wikipedia, Autolyse refers to a period of rest after the initial mixing of flour and water and before the addition of yeast and other ingredients. This rest period allows for better absorption of water and helps the gluten and starches to align. Similarly, Autolyse Bakery in Braddon is a place to rest, and to enjoy a great coffee, delicious sandwich or sweet. Sydneysiders familiar with the emerging Central Park precinct may have had an opportunity to try some of the excellent breads, tarts and café meals available at the recently opened Autolyse there; and if they have been sufficiently impressed, they would be well advised to come to the original. Situated on Lonsdale Street, this bakery and café has made quite a name for itself over the last couple of years. It specialises in natural, handmade sourdough breads, and classic bakery staples such as pain au chocolat, escargot and croissants, along with tarts, slices and cakes, all displayed in a glass cabinet filled with variety. Inside, the space is long and narrow, with white-tiled walls and floors, and an open bakery allowing patrons to watch the baker’s work first hand. Outside, a huge wall mural adds a grungy street look and the large seating area captures the morning sun. Nationally renowned local roasters ONA supply the excellent coffee, and a range of cold pressed juices are made on premises and available fresh or bottled. All meals are under 15 dollars, and typical are whole fresh sardines with skordalia and citrus salsa, or white bean tomato and chorizo cassoulet with baked egg. Sandwiches use Atolyse’s superb sourdough, and may be filled with a number of combinations such as mixed mushroom ragout, or baked egg white risotto omelette with tomato and mushroom. Salads are served on wooden boards, accompanied by a fair slice of fresh bread, and may be smoked trout with kipfler potatoes and yoghurt dressing, or chicken heirloom tomato, parsley and croutons. Of course, most items are available to take away, as are the daily baked sourdoughs.
