Three Mills Bakery expands their loaf-changing delights to Woden

Three Mills Bakery might just be set on world domination! While the basis of their business is slow-proved sourdough, they are fast-proving to be a business on the up and up with yet another location announced recently. The upcoming Woden shop marks the fifth store for the Canberra business – an impressive feat for a bakery that started with just a handful of employees!

The Monday to Friday operation will be modelled on their current cafes in Fyshwick, the city and Capital Food Markets at Belconnen. Located opposite local pub The Alby, the Three Mills Bakery cafe will cater to office workers around the area, as well as the increasing numbers of people calling Woden home.

“Our new Woden cafe will be a place for locals to get their daily sourdough loaf, for workers and public servants to get their morning coffee and a grab-and-go lunch, and for those looking for a place to relax for a long brunch or lunch. We’re excited to launch,” brand and marketing manager Belinda Armstong said.

The Woden space was formerly occupied by Sri Lankan business Short Eats. The site is currently undergoing renovations, with a launch anticipated on 7 May.

In the lead-up to the opening, Woden locals will still have plenty of opportunities to get their hands on a loaf of bread or maybe a croissant. Three Mills Bakery staff will be hyping up the new shop with some giveaways and pop-ups in the coming weeks, so keep an eye out for those black t-shirts!

The Three Mills cafes in the city and Belconnen feature a ‘theatre bench’ where bakers and pastry chefs make fresh taglio (Roman-style sheet pan pizza) and other treats throughout the day. Hopefully, this trend will continue in Woden! Of course, the two Fyshwick locations deal with the bulk of production, with the large kitchens walled off by glass so customers can watch the busy bakers making bread and pastries as they enjoy their coffee.

In addition to its cafes and wholesale operations, Three Mills Bakery also makes a popular ‘bake-at-home’ range. Launched mid-pandemic, these pastries continue to be a hit with home bakers and are available in select IGAs or in-store.

Three Mills Bakery can also be found at the Capital Region Farmers Markets at EPIC on Saturday mornings or at the Southside Farmers Markets on Sundays.
