New Argentinian restaurant set to sizzle in the south

For its new restaurant, Southbound, the Canberra Southern Cross Club (CSCC) Tuggeranong staged a daring and delicious heist. It poached the chef of an Argentinian ambassador to work its ‘parrilla’.

“They said, ‘We need an Argentinian chef who knows their way around the parrilla, and here I am!” Southbound head chef Juan Macchia says.

The parrilla is the centrepiece of Southbound, a key addition to the Tuggeranong club’s recent renovation.

More than your average barbecue, this traditional Argentinian grill comprises a metal grate over a heat source of hot coals or wood embers, yielding a distinctive and smoky flavour profile to the diverse array of meats and vegetables it grills.

The results are positively mouthwatering, but more than that, the parrilla is Juan’s gateway to delivering lively Argentinian hospitality.

“In Argentina, we have a whole ritual for starting the fire,” he says.

“I remember my first time in front of a parrilla. I was about three years old and my grandfather was making asado – that’s the word we use to describe the technique, the social event of the barbecue itself and the foods we cook. He said, ‘Come here’, and he gave me a small piece of sweet bread. It was very special.”

Now transported from South America to south Canberra, guests can expect the full asado experience following the opening of Southbound Parrilla Grill and Clubhouse at the renovated venue.

In a relaxed environment wrapped in lush greenery and natural light and featuring a massive LED screen, the parrilla will be visible in the brand new open kitchen and bar area for all to see as it turns out a delectable array of meats and vegetables.

The restaurant is stage two of a broader three-stage renovation of CSCC Tuggeranong, which includes a brand new modern reception area and a whole new Henry’s family restaurant.

The venue will also launch its own gelati brand, Professoressa Gelati. Later this year, The Terrace will open, offering a more upscale dining experience with table service.

Throughout January and February, CSCC is offering the perfect way to get acquainted with its Argentinian grill, hosting an All-You-Can-Eat Parrilla Feast and Good Vibes lunch event every Saturday and Sunday until Sunday, 9 February.

For $49 per person and $29 for kids 12 and under, you’ll enjoy a feast served family-style on shared tables, creating the ultimate BBQ experience, plus a drink on arrival. True to the grain of Argentinian hospitality, nobody will leave hungry with an “all-you-can-eat” offering in a laid-back atmosphere perfect for sharing with friends.

Beverage add-ons will also open the door to discovering traditional cocktails, including Argentine Clerico (Sangria), Fernet Con Coca (an Argentinian take on rum and coke, similar to Campari) and Julepe (a mojito without the mint).
