Who is Paolo Sossi? I’m the co-owner of Blackbird Bar and Café Gather.
Best recent dining experience: Probably Alcove. What a fantastic experience I had there! They have a degustation menu that pairs cocktails with canapes and Ricky and his team have brought a whole new concept to Canberra.

Most embarrassing pantry item: I still have two packets of easy mac and cheese that I bought from Aldi last year, not sure if I will ever eat them though!
Must-buy ingredient: Definitely parmigiano cheese, I make sure that I never run out.

Next big thing: I am about to bring a new modern Australian eatery with a twist to the Canberra scene. I am extremely excited as it’s been a work in progress for a while now.
Favourite place for breakfast in the ACT: I love Mocan & Green Grout because it’s simple and tasty, just what I like for breakfast.
My Canberra food secret: I’d probably say Gather’s new Turkish egg, it’s seriously a dish to die for!
Biggest culinary influence: Oh my Mum and Dad back home in Italy, for sure.
Favourite cookbook: I would probably say Never trust a skinny Italian chef’ by Massimo Bottura, that guy definitely knows how to cook!

Who I admire on the Canberra food and wine scene: Tony Lo Terzo, the owner of The Italian Place, he is incredible! He has the best hosting skills in the hospitality scene. I still don’t know where he gets all that energy though.
What’s on the menu this week: It will probably take another week or two, but we are working on a new hotdog menu for Blackbird, so watch this space.
Where I’m going next: I’m tossing between New Zealand as I’ve never been there before, or Italy because I haven’t seen my family in three years, so it’s about time!
Death row meal: Traditional lasagne paired with a nice bottle of red wine.

COVID-19 response: You should always look forward and never back. It’s in the past now so I would much rather focus on the good things that this year will bring.
My really simple recipe tip: My nonna taught me to always keep it simple, tasty and authentic, so I want to follow in her footsteps.
