The Merchant opened at Kingston Foreshore in the spring of 2014 with the aim of providing a sophisticated yet relaxed dining experience by Canberra’s Lake Burley Griffin and an emphasis on classic loved dishes. Owner Beatrix Nagy has put together a comfortable and modern space with the feel of a providore. High ceilings and exposed bricks, along with industrial style fittings are juxtaposed with the resort style view. Open seven days for breakfast and lunch, and five nights a week for dinner; and with drinks, cakes and coffee served all day, The Merchant makes it easy to enjoy the vista at any time. The kitchen—headed by chef Steven Sweeney—often brings its creativity to bear to offer dishes with masterful displays of artful plating that are well and truly above the expectations of the average casual diner. Typical breakfast offers stay true to classic tastes with house made scones served with Merchant conserves, cultured butter & cream, or eggs how you like with the traditional sides. Seafood complements the waterside locale at dinner with an Atlantic salmon with creamy parsley & lemon pearl barley, pepita seed granola & crushed cashew, or a linguine with chilli prawns, tomato and basil broccolini. For lunch, seared Canadian scallops are served with mint pea puree, chorizo & olives, and oysters come fresh with salmon caviar. Meat lovers are not ignored by any means, either. Expect Lamb cutlets marinated in parsley, garlic & olive oil, served with red pepper, Israeli couscous, yoghurt & flaked almond & macadamia, or a 250gram sirloin with asparagus, mushroom & carrot puree. Skewers are casual and delicious, and may be made from chicken with paprika & dill served with lemon yoghurt or beef marinated in honey & light soy served with chilli mayonnaise. From Fridays through to Sundays, an outdoor ‘waterfront grill’ kicks into action for lunch and dinner, adding a special menu of grilled meat dishes. The Merchant is BYO, but as it is part of a group that also operates the nearby Prohibition bottle shop, it offers free corkage for those that have purchased their wine there.
