Hippo Co. embraces a certain ‘mid twentieth-century American’ charm. Masculine in nature, it pays homage to a time when the liquor flowed freely and real men wore hats. Perched above a Chinese restaurant in Garema Place, this bar is a cosy curation of salvaged timber, exposed bricks and art deco furnishing. Taxidermied bucks keep a watchful eye on the patrons who gather on leather benches and bistro chairs to enjoy the ecstatic pounding of live jazz on Wednesday evenings, or or early rock & roll the rest of the week, over whiskey and complimentary pretzels. Whether you like yours with an ‘e’ or without, the impressive collection of over 250 labels betrays the true passion and obsession at Hippo Co. This bar runs weekly whiskey tastings and continually updates its stock with labels from all around the globe. America, Japan, Canada, Ireland and of course, Scotland are all represented, along with a couple of choice Aussie drops. Be advised though, that cocktail making is taken very seriously here as well. Expect to find classics like the New York Sour (rye whiskey, fresh lemon juice, and red wine) and Charlie Chaplin (sloe gin, apricot brandy, and fresh lime juice) on the cocktail menu. Photographs of American icons like Teddy Roosevelt, Sugar Ray Robinson, and Charlie Parker adorn the walls, keeping the company decidedly grown-up in this decidedly hip speakeasy.
