A couple of years ago now, an unassuming neighbourhood Thai restaurant with the cute name of Mork’s made a move from the quiet northern suburb of Florey to the grander surrounds of Kingston Foreshore–Canberra’s first waterside dining precinct–and no doubt left many local patrons feeling a little sad that they now had to travel across town to get their fix of what is possibly the most innovative Thai food in the city. The good news for the rest of us though, was that the move put Mork’s firmly in the sights of a wider audience, and allowed us all to share this wonderful little secret. Brothers Mork and Benn Ratanakosol are the driving force behind this contemporary Thai restaurant and, along with a crew of dedicated family and staff, deliver something a little unexpected for lovers of this cuisine. Yes, the flavours are instantly recognisable as Thai, but the refinement and thought takes this particular Thai to a level previously not experienced in the nation’s capital. Chef Mork learnt his craft directly from father Adul–who still does a number of shifts in the kitchen–but decided, along with Benn, that if they were to continue the family tradition they would add their own unique twist, and this seems to be a mission that is accomplished. In line with contemporary eateries, the menu is short, with eight starters and eight mains. Scallops and pig ear terrine with chilli relish are typical of first course offerings as are cauliflower fritters with fish sauce and crème fraîche, and pork buns are little kebab-style envelopes. For mains, rainbow trout comes with a tamarind reduction, fried onion, dried chilli and witlof; and lychees that burst with flavour enhance duck red curry with crispy rice cake. Desserts, refined as they are, are youthful and fun. Fried donuts, vanilla ice cream & bacon are cheekily named Homer Simpson, and The Stifler is warm apple pie, caramel cornflakes and vanilla ice cream. The space is slick and slightly subdued with the odd bold motif adding drama, and full-length windows allowing the waterside location to shine.
