The vendors at Verity Lane are celebrating the finer things in life this week with a celebration of truffles!

The Canberra region is well regarded for its truffles, and the season is well and truly upon us. Local growers have their dogs out and about sniffing for nuggets of ‘black gold’ and lovers of this aromatic fungi have been hunting, tasting and sampling the best the region has to offer.

“Canberra is lucky enough to enjoy the best truffles in the country and our local chefs know how to use them best, too,” said Verity Lane owner Phillip Keir.

Truffles are often associated with French and Italian cuisines, but there’s a growing trend of chefs using this classically European ingredient in foods from all over the world.

Verity Lane’s newest vendor Lim Peh Wan Tan Mee has been working on a very special dish to showcase truffles in their Singapore-style food.

“Shui Jiao is a type of dumpling that is normally poached in a broth of some sort,” said the Lim Peh team.

“In our rendition, we mix grated black truffles into the dumpling mixture. We gently poach it in double-strength chicken broth and serve it on top of our signature egg noodles which have been mixed through with our house-infused truffle oil. It’s then topped off with a 60-degree, truffle-infused hen’s egg.”

The bar at Verity Lane is also getting in on the fun with a return of their signature Truffle Negroni made with local truffle-infused Underground gin.

“It’s an experience that is so uniquely Canberran and one that only occurs for a limited time every year, so it’s best you make the most of it,” says Mr Keir.

Other stallholders will be featuring truffles across their menus. Customers can look forward to a truffle mushroom bao from Superbao and a truffle-infused tom ayam from Indonesian stall Rasa Rosa. To get the most out of the truffle flavour, this dish will feature truffled free-range chicken mince with truffle-infused egg steamed in a banana leaf with coconut cream and garlic and served on truffle-infused rice.
