Hot in the City: UNDER, the cult market bakery opens in Mawson

The rise and rise of Mawson is well underway. As a local Southsider and carb lover, I am reaping the benefits and living the high loaf!

Completing the trifecta of making freshly made delicious baked goods on-premises in the area is UNDER. The cult market favourite which started life as a stall at the Southside Farmers Market is in good company.

They will be joining the ranks of the well-established Italian Continental Bakery which has been pumping out some of Canberra’s best Cannoli for over three decades and the recently opened Al Manoosh. The Lebanese Bakery has been doing a hot trade with constant lines out the door since opening at the end of October selling traditionally topped flatbreads.

UNDER will be slinging out their tried and tested sweet Swedish buns along with experimenting with different varieties of bread. The man behind the oven, Lachlan Cutting, drew inspiration for the business after spending time working in Copenhagen and Melbourne.

“After working in hospitality for 12 years at a handful of different businesses throughout Canberra, I decided to travel to Copenhagen and experience working in one of the top restaurants in the world. UNDER started from an idea that popped to my head while I was living in Melbourne for a short time after returning from Copenhagen,” said Lachlan.

“I was shopping at a local market in Melbourne when I came across a lady selling croissants. We had a quick chat and that is when I thought I want to bake and sell at markets. I was quick to come up with the idea of baking Scandinavian treats and thought of Bullar, a sweet Swedish bun.”

Full of motivation following his travels, Lachlan returned to Canberra and started UNDER in November 2019. Mastering the seasoning and technique of the sweet yeast bread that is typically flavoured with cinnamon and cardamom he started selling them at the markets and to local cafes.

Brothers Lachlan and Matt have always wanted to have a space of our own to work together and offer something unique.

The 12 months since launching has been full of hard work and early mornings building a steady following and finding a permanent place to call home. The next step of opening a brick and mortar store also signals the business turning into a family affair.

“My older brother Matt has joined me on this journey. We have always wanted to have a space of our own to work together and offer something unique.” shared Lachlan.

“We decided on Mawson because we found a perfect spot with everything we needed already waiting for us. And we love the location! A lot of our following is already in the Woden area from the Sunday markets and we would love to see people venturing from the inner city and north Canberra down to the area. Mawson has so many great things to offer.”

Opening today (12 November), UNDER will be baking and open Thursdays to Sundays from 8:00 am. Located next door to Tutto Delicatessen, the brothers have big plans beyond just being a grab-and-go bakery. With seating on its way expect to see a changing menu full of fun and local collaborations.

“To start, we will be offering our sweet buns (Bullar) and some different breads. At this stage it is mostly sourdough varieties including tin loaves, rolls, and focaccia,” said Lachlan.

“In the near future, we plan to have some menu items changing seasonally which we will plate up and serve to those dining inside or outside when we eventually have the seating. We will have hotdog days too where we will make our own buns and sausages from Southlands Quality Meats from down the road.”
