Having a couple of years under its belt now, Les Bistronomes – the Braddon bistro headed up by chef Clement Chauvin and sommelier Abell Bariller – has grown in stature, cementing its place at the apex of French cooking in Canberra…

Creative and meticulous plating is a feast for the eyes. Delicate and artful without sacrificing the authenticity of this king of cuisines, it has become a signature at Les Bistronomes. Typical starters may include a mouth-explosion masquerading as soup – pickled chestnut, caramelised onion and chive crème fraiche. A short list of a la carte mains are typified by spatchcock au vin with Paris mash potato and smoked speck; and both courses are complemented by seasonal seafood offerings from the blackboard.

Those in the know however will mostly opt for the impressive list of ‘mains for two’ that includes an outrageously theatrical ash crusted whole duck, a l’orange style – served flaming at the table and then returned to the kitchen to be carved. Be warned, pre order for this! Inside, the dining space is warm and welcoming, totally unpretentious, somewhere between dainty and industrial. From the outside, a larger than life cladding of red, white and blue overlooks an alfresco dining area surrounded by pots filled with herbs for use in the kitchen. Simply painted, unfussed and rejecting any delusions of grandeur, it pays homage to the Tricolore while totally understating the mastery of culinary refinement delivered here.
