Two good things have happened at Casino Canberra over the last couple of years. The first is that the place has been purchased by a new operator who has spent a motza giving it a much needed makeover. The second is that in-house restaurant Natural 9 has been reinvented, championing local produce and setting a high benchmark for fine dining within a gaming space – in Canberra or anywhere else for that matter. Here is a sleek, modern space, not overly detached from its surrounds, but segregated enough to stand alone as a serious dining destination. With heavy drapes, high backed white leather banquettes and subtle colour tones, it communicates the type of luxe style expected for this level of dining.

The seasonal Modern Australian menu is a collaboration between highly credentialed globe-trotting chef turned F&B manager Chad Ogden and locally recruited executive chef David Black (formerly of local favourite Artisan). Typical is a fresh and light starter of sake citrus-cured salmon given zing with cucumber, lime sauce, sake and rose jelly. For mains, expect a perfectly cooked Grimaud duck breast with Sichuan pepper and seriously flavoursome honey glazed veal sweetbreads. A short selection of classic Asian dishes adds to the offer – no doubt catering to a growing casino market but staying true to the culinary flare on show here. Great wines, a serious cocktail list and impeccable service round out the experience, and a flutter at the tables is an option, while not being crucial to a great night here.
